Fluffy Pancakes

Ingredients
- 2 cups Bokomo Cake Flour
- 2 cups milk
- 2 Tsp Pure Sugar
- ½ Cup Safari Raisins
- 1 tsp Baking Powder
- 1 tsp Vanilla Essence
- ½ Cup Butter
- Pinch of salt
- Butter
Method
- In a mixing bowl add your flour and make a well in the middle, add your baking powder followed by your wet and dry ingredients including your raisins
- Mix well until there are no lumps in your mixture
- Heat your non stick pan on medium to high heat for 5 minutes, (you may lightly butter your pan if you wish)
- Scoop equal amounts of your mixture into the pan cooking each for 2 to 3 minutes on each side
- Stack them up on a plate, top up with a nob of butter and serve with any syrup of your choice with dry or fresh fruits
Tip: You know your pan cakes are ready to flip once they start bubbling in the middle
